A cup of tortilla soup or black bean soup served with a Luncheon portion of chicken caesar salad and jalapeno corn bread.

South of the Border Cobb Salad

Baby greens, tomatoes, chicken breast, bacon, avocado, boiled egg, red onion, black olives topped with blue cheese and tortilla strips and blue cheese dressing.

Sante Fe Chicken Salad

Grilled chicken baby greens, black beans, corn, cilantro, avocado, tomatoes and tortilla strips. Served with a Chipotle Ranch Dressing.

Mango Strawberry Salad

Grilled chicken on top of baby green, mango, strawberry, basil and cilantro. Served with vinaigrette dressing.

Mexican Crab Cakes

2 spicy crab cakes served with mixed greens, black beans and corn salsa.

Luncheon Teriyaki Shrimp Fajita

6 succulent shrimp grilled with teriyaki glaze served with vegetables and rice and topped with grilled pineapple and tropical fruit salsa.

Rosalita’s Club Salsa

Rosalita takes ham, turkey, jack and cheddar cheese and wrap them in a flour tortilla before warming it gently and serving with Texas chili and salsa.

Queso Fingers

Tender chicken fingers served with French fries and plenty of queso for dipping.

Soft Tacos

Two flour tortillas stuffed with ground beef, cheese and topped with lettuce, tomato and onion.

Sautéed Vegetable/Black Bean Tacos

Two whole wheat tacos filled with black beans, sautéed vegetables, jack cheese, lettuce, tomato, scallions and sour cream served with rice.

A luncheon portion of our fabulous fajitas. You choose chicken, beef or veggie.

Mini Chimichanga

A luncheon portion of our classic chimichanga. You choose chicken or beef.

Portobello/Spinach Quesadilla

Marinated Portobello mushroom tucked inside a large grilled flour tortilla with creamed spinach, chilies and Jack cheese. Served with sour cream, guacamole and pico de galo.

Mini Quesadilla

Rosalita’s version of her quesadilla, only portioned for the lighter appetite.

Chicken Enchilada

Chicken enchilada covered with enchilada sauce, sour cream sauce and Monterey Jack cheese. Served with rice. May substitute chicken for cheese, beef or beans.

Spinach/Chicken Enchilada

Creamed spinach and chicken stuffed inside a whole wheat tortilla and topped with cream sauce and Jack cheese. Served with black beans.

Enchilada Sonora

A great luncheon combination! One cheese and one beef enchilada covered with cheddar cheese and served with rice.

Pork Enchilada

Pork enchilada covered with tomatillo sauce. Served with rice and black beans.
